Chianti DOCG Governo all'uso toscano

An ancient Tuscan technique for an extremely modern wine. Through a look to the past and with the skills of the present a wine is born that speaks of the Tuscan tradition. Ruby red in color with aromas of red fruit and spices, anise, juniper berries and raspberry. Soft and juicy on the palate, full and enveloping in its balsamic persistence.

The grapes are then destemmed and added to the already fermented “new wine”, proceeding with a second, slow refermentation at a controlled temperature. This procedure, called “governo all’uso toscano”, dates back to the 1800s and comprises the drying out of a part of the best grapes on specific supports, which are then used to activate a second fermentation of the original must.
